Greek Jello (Lemon)
Here’s an easy recipe if you’re looking for a low-carb dessert, and enjoy citrus. The flavor profile of this is on the tart side. I’ve done different versions of this such as Orange, and Lime. Pretty easy to just use different flavors of Jello, citrus zest, and LMNT packets. The zest and LMNT are optional but the flavor will be muted without one or the other. Another option is to use cherry Jello, and Liquid IV Ring Pop. This recipe yields a fairly small amount so depending on the container you decide to use, you may need to double the recipe.
Ingredients
1½ cups Greek yogurt (5% fat)
1 packet lemon-flavored Jello
1 cup boiling water
1 packet Lemon LMNT electrolyte powder
Zest of 1 lemon
Directions
In a mixing bowl, combine the Greek yogurt and lemon zest.
In a separate bowl, whisk together the lemon Jello powder and boiling water until fully dissolved.
Let the Jello mixture cool to room temperature.
Once cooled, stir in the LMNT electrolyte powder until fully dissolved.
Pour the Jello mixture into the yogurt mixture and whisk or stir until fully combined.
Pour into a small, non-reactive container (about 4”x6”x2” works well) and refrigerate until set — roughly 4 hours or longer.
Once set, cut into 6 servings and enjoy.
